1 Handed Taco Bite

8 1-oz extra thin sliced square deli ham
1 lb extra lean ground beef
1 egg, beaten
2 cups shredded lettuce
1/2 cup shredded low fat Cheddar cheese
1 Roma tomato, chopped fine
1/2 cup salsa
1 pkg taco seasoning
1/4 teaspoon each black pepper & salt

Preheat oven to 425 F.  Treat a muffin tin with nonstick spray. Cut the ham slices in half and press them into muffin tins.

Brown the meat in a nonstick skillet and drain. Add spices and mix well. Let cool for a few minutes. Add egg & cheese and mix with ground beef. Spoon the beef mixture into each ham lined muffin cup. Top with the salsa.

Bake for 15 minutes, or until hot and ham slices are browned on the edges. Let sit 5 minutes before eating. Top with your favorite taco fixin’s: lettuce, tomato & cheese. Enjoy!
