8 oz raw boneless chicken breast, no skin
1/2 green or red bell pepper, cut into strips
1/2 medium onion, cut in half & sliced thin
1 tablespoon olive oil
2 teaspoons any taco seasoning
garlic powder, salt & pepper to taste

Slice the chicken breast in half then into strips about 1/2″ thick. Sprinkle on all sides with garlic powder and 1 teaspoon of taco seasoning.

Heat olive oil in large nonstick skillet over medium high heat. When hot add peppers and onions and 1 teaspoon taco seasoning. Stir fry quickly for 1 minute.

Add chicken and stir fry quickly to mix with peppers and onions. Cook and stir until chicken is cooked through, about 5-6 minutes. Check for seasoning and serve hot!

Tip: Make a double batch and serve leftovers over mixed greens for lunch the next day.
