4 large eggs
4 large egg whites
2 tablespoons water
2 thin slices bacon, cooked crisp & crumbled
3/4 cup shredded low fat Cheddar, divided
1/2 cup chopped & seeded tomatoes
1/2 cup chopped fresh spinach

Heat oven to 350 F. Coat 9″ glass pie plate with cooking spray.

Beat whole eggs, egg whites and water with a whisk in medium bowl until blended. Stir in 1/2 cup cheese, tomatoes, bacon and spinach. Pour into pie plate.

Bake 25-30 minutes or until puffed and golden brown. Sprinkle with remaining cheese. Bake 5 minutes until cheese melts. Let sit 5 minutes, then slice and serve.
