Jessica Seinfeld, wife of comedian Jerry Seinfeld, wrote several cookbooks for healthful eating. We adapted her chocolate pudding recipe to make it Kimkins friendly!
Serves 4
1 cup unsweetened chocolate Almond Breeze “milk”
8 oz silken tofu
1/2 cup Torani 0 calorie chocolate syrup
4-6 pkt Equal or Splenda sweetener
1 pkt unflavored gelatin
1/2 teaspoon vanilla extract
Blend tofu, chocolate syrup, vanilla and a pinch of salt in a food processor until very smooth. Set aside.
Simmer chocolate “milk” in a large saucepan until hot but not boiling. Whisk in gelatin until dissolved, about 1 minute. Whisk tofu into chocolate “milk” and stir until smooth. Stir in sweetener until blended. Taste and add more sweetener if needed.
Pour pudding mixture into individual serving dishes and refrigerate until firm, about 2 hours. Garnish with light dairy topping if desired.
