4 Carb Swiss Mushroom Burger

Swiss Mushroom BurgerServes 2

1/2 lb extra lean 95% ground beef
1 Kimkins Protein Roll, cut in half lengthwise
1/4″ thick slice medium onion, made into rings
4 medium button mushrooms, sliced
1 garlic clove, minced fine
2 slices lowfat Swiss cheese
4 teaspoons diet margarine
1 tablespoon prepared horseradish (optional)
1/2 teaspoon seasoned salt
1/4 teaspoon each black pepper & onion powder

Mix ground beef or turkey with garlic, horseradish and spices.  Form into 2 patties.  Coat a nonstick skillet with cooking spray and cook burgers 4 minutes on each side or until cooked through.  Remove to a plate and keep warm.

In a small nonstick skillet melt 3 teaspoon margarine and add onions and sliced mushrooms.  Saute on medium heat until onions begin to caramelize and mushrooms are cooked through, about 4-5 minutes.  Let sit while you toast the protein roll.

Spread cut sides of protein roll with the remaining 1 teaspoon diet margarine. Sprinkle with garlic powder & pepper, then place face down in the large nonstick skillet and grill 1 minute or until golden brown.  Flip rolls over so they’re toasted side up.

Top each protein roll with a cooked burger, then divide the mushrooms and onion evenly on top of both burgers.  Top each with 1 slice Swiss cheese, cover and cook on low for 1 minute or until cheese is melted.  Serve with Low Carb KFC Coleslaw on the side.

Tip:  Lower calories and fat grams by using ground turkey breast.
