Angel Hair Carbonara

2 bags 0 carb Skinny Dip Noodles
8 asparagus, halved lengthwise & cut in 2″ pieces
2 large eggs
2/3 cup grated Parmesan cheese
4 thin slices bacon, diced
3 cloves garlic, minced
1/4 cup dry white wine
salt & pepper to taste

In a large serving bowl beat together eggs and cheese.   Bring a large stockpot of well salted water to a full boil.

Rinse pasta very well under running water and drain.  Add pasta and asparagus to stockpot and cook 2 minutes.  Drain in a colander and dab with paper towels to remove moisture so sauce sticks better.  Add hot pasta and asparagus to egg mixture and toss to coat evenly.  The egg will cook from the hot pasta.

In a large nonstick skillet cook diced bacon on medium heat until crisp.  Stir in the garlic & wine and and cook 1 minute.  Stir bacon into pasta mixture and toss to combine evenly. Season with salt and pepper to taste and serve immediately.  Add slices of Kimkins 1 Carb Garlic Bread on the side if desired.
