Angel Hair with Shrimp & Spinach

Skinny Dip Shrimp Spinach PastaServes 4

1 lb large shrimp, peeled & deveined
2 bags Skinny Dip Noodles
1 cup dry white wine
3 cups fresh baby spinach
2 tablespoons olive oil
3 green onions, white & green sliced separately
3 garlic cloves, minced
1/4 teaspoon red pepper flakes

Rinse Skinny Dip Noodles under running water for 2 minutes.  Add to a large pot of salted boiling water and cook 2 minutes.  Drain in a colander.  Tear spinach into bite size pieces.  Slice green onions thin diagonally, keeping green and white parts separate.

Heat oil in a large nonstick skillet over medium heat. Add white part of green onion, garlic and red pepper flakes.  Saute until translucent, about 2 minutes. Add the wine.  Increase heat to medium high and simmer until wine is reduced by half, about 5-7 minutes. Add shrimp and cook while stirring until they turn pink, about 2 minutes.

Add noodles, green part of green onion and spinach to the skillet. Toss to combine with shrimp.  Cover and cook 3 minutes.  Season pasta to taste with salt and pepper.  Transfer to a large bowl, serve to friends & family and enjoy!
