Makes 4 Servings
.
1 lb pork tenderloin (shaped like a log)
4 thin slices bacon
1 tablespoon diet margarine
1 tablespoon oil
1 teaspoon seasoned salt
1 teaspoon garlic powder
1/2 teaspoon dried sage (not ground)
1/2 teaspoon dried oregano (not ground)
.
Preheat an oven to 400 F. Combine garlic powder, seasoning salt, basil and oregano in a small bowl.
.
Place the bacon in a large oven safe skillet and cook over medium high heat until lightly browned but still flexible, about 6 minutes. Drain the bacon slices on paper towels and discard bacon grease. Melt oil and diet margarine in the skillet on medium high heat.
.
Wrap the pork tenderloin with the semi cooked bacon strips and secure with toothpicks. Slice the tenderloin between each bacon strip to create medallions. Dip both sides of the medallions in the seasoning mix. Cook each medallion for 4 minutes on each side.
.
Place skillet into the preheated oven and bake until the pork is no longer pink in the center, about 17-20 minutes. For better accuracy an instant read thermometer inserted into the center should read 160 F.
