Chicken Satay & Peanut Sauce

Kimkins Chicken SataySlice boneless chicken breast or thighs into strips about 1/2″ wide.  Season well with your favorite spices or marinade.  Thread on bamboo skewers and grill on medium until cooked through, about 4 minutes each side.

Serve with a drizzle of spicy peanut sauce for a Thai Indian treat!  Be sure to use “no sugar added” peanut butter or the carbs are higher.  Add a splash of Indian pepper sauce to the chicken for added authentic zip!.

Spicy Peanut Sauce

Makes 20 Tablespoons

2/3 cup Jif Natural No Sugar Peanut Butter
1 cup chicken broth
2 tablespoons lime juice
2 tablespoons Splenda Brown Sugar
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
1/4 teaspoon crushed red chili flakes

Heat peanut butter is a small saucepan over medium heat.  Add chicken broth and until combined.  Add the remaining ingredients and cook 5 minutes or until thickened.  Serve warm as a sauce or dip for chicken, cooked seafood or beef.
