Chocolate Cheesecake MousseServes 12

16 oz cream cheese, cut into cubes
1/2 cup granulated Splenda
2/3 cup water
1/3 cup sugar free chocolate syrup
1 packet unflavored gelatin
2 tablespoons sugar free chocolate pudding mix
2 teaspoons vanilla extract
1/4 teaspoon salt

In a glass cup sprinkle gelatin over cold water. Let stand 2 minutes.  Microwave on HIGH until hot. Stir thoroughly and let stand until completely dissolved.

Add cream cheese cubes and stir until softened. Blend well with a strong hand mixer. Add Splenda, chocolate syrup, pudding mix, vanilla and salt.  Blend again until well mixed.  Pour into 12 dessert dishes. Chill 2 hours or until firm and serve.
