Mock Cinnamon Rice Pudding

1 cup 0 carb Skinny Dip Noodles Rice Pearls
1 1/2 cups light cream
3 egg whites
1 egg
1/4 cup granulated Splenda
1 teaspoon vanilla
1/4 teaspoon cinnamon

Preheat oven to 325 F. Treat custard cups with cooking spray.  In a medium bowl combine egg whites, egg, cream, Splenda and vanilla. Beat until combined but not foamy. Stir in orzo and cinnamon.

Place custard cups in a 9×13″ baking dish. Divide mixture among cups. Place baking dish on an oven rack. Pour boiling water into baking dish around custard cups to a depth of 1″.

Bake about 40 minutes or just until set. Stir after 20 minutes. Serve warm or chilled.
