Meet Ursula: Lost 54 Lbs & Wearing Size 8!
I lost most of my
weight (54 pounds) in less than 6 months. I maintained in December and
then reached goal in January. I’m actually 2 pounds under my goal
weight. I can’t believe that I made it and wear a size 8 now!
Buying a Women’s World magazine and finding Kimkins
changed my life. We moved to the U.S. 14 years ago and I’ve been
steadily gaining weight ever since. I tried so many diets like Weight
Watchers, Slim Fast, etc. They worked for while but I wouldn’t even
come close to goal before I couldn’t stick with them anymore.
I had no idea that carbs were the culprit. And I thought I knew
everything about dieting. Boy was I wrong. The biggest thing that I’ve
learned is that when I control my carbs I control my appetite and my
cravings, simple as that.
Weighing less has made me a lot more active. My husband and I work out
2-3 times a week, hike at least twice a week, go bowling, play pool and
ping pong. I have so much energy. Not only do I weigh almost 60 pounds
less, I also feel 20 years younger.
One more thing I have to share is that my LDL has dropped from 178 to
122 and my HDL increased from 52 to 78! My doctor is very happy with
me. The support here is fantastic and has helped me every day.

Kimkins is going to Las Vegas! Ever want to meet your Kimkins pals face to face? Well, here's your chance!
We're planning a casual get together for the weekend of July 18-20.
The itinerary is being worked up now with a few meet & greet
opportunities. No matter when you arrive you'll have a chance to meet
your Kimkins buddies. Everyone will make their own airfare and hotel
arrangements.
Start planning where you'll stay. If
you're interested in being set up with a roommate, let us know! We'll
post additional info on the Kimkins homepage as soon it's available
including a map of the Vegas strip for hotel locations.

Get Rid of Your Visceral Fat!
If you are at risk for (or have) type 2 diabetes, here's some news that should get you moving!
Researchers from Syracuse University say exercise is one of the best
ways to reduce the amount of visceral fat stores in the body. High
levels of visceral fat — more commonly known as abdominal fat — are
directly linked to a decreased ability for your body to use insulin
properly, leading to diabetes.
In the study, researchers divided 33 women with type 2 diabetes into 3
groups. One group simply dieted, the second ate their regular fare, but
started walking and biking, and the third group did both. Those who
dieted — or dieted and exercised — both lost about the same amount of
weight after 14 weeks (around 10 pounds). Those who only exercised lost
about 5 pounds.
But what differed between the active and non-active groups was where
the weight loss came from. Those who only dieted lost subcutaneous fat
— the fat just below the skin — but not visceral fat. Those who
exercised lost visceral fat, and those who did both, lost both!

Egg Fu Yung
Ingredients
- 6 large eggs
- 1 red bell pepper, seeded & finely chopped
- 1 cup mung bean sprouts
- 3/4 cup chopped shrimp or crab (optional)
- 1/2 cup sliced mushrooms
- 1/4 cup green onions, finely chopped
- 1 Tbsp lite soy sauce
- 2 Tbsp olive or canola oil
- 1/2 tsp each salt & black pepper
Beat
eggs until foamy, add salt & pepper. Heat oil in nonstick pan and
saute veggies until tender, about 5 minutes. Add soy sauce and crab or
shrimp and stir fry quickly for 30 seconds over high heat.
Add veggie mixture to beaten eggs, stirring quickly to avoid cooking.
Pour large spoonfuls of egg mixture into hot oil and cook until lightly
brown on one side and flip. Cook briefly until golden brown, remove to
heated platter.
Garnish & serve! May be wrapped and frozen for future snacks, dinners or brown bag work lunches.
