"September 3, 2007 is when I decided to start my new diet ... Kimkins.

I'm currently 39 years old with a great husband and 3 young boys (ages 8, 6 and 4). My family health history (diabetes, high cholesterol and high triglycerides) led me to research lo-carb/lo-fat changes of diet -- which led me to choose Kimkins.  I was also overweight from years of birthing & raising babies and snacking on everything that was loaded with carbs!

My heaviest weight ever was 228 pounds (May 2007).  I began Kimkins on Labor Day 2007 weighing 220 pounds and being a size 20.  Here it is April 2008 (40 weeks later) and I weigh 137 pounds!  I'm between sizes 4 and 6. 

I had no idea what my goals were or if I could indeed follow a diet.  I had never dieted before, but found Kimkins to be very simple to follow.  With at least a 30 minute walk 4-5 days per week (didn't start walking until 12 or so weeks into the diet), some minimal exercises and daily vitamins, I feel the most "fit" I have ever felt!

In the first 40 days I lost 38 pounds and had terrific blood test results that motivated me even more!

Three years ago I had triglyceride levels of 1367 (not a mistake!!!) One year ago my total cholesterol was 286. With walking 30 minutes and medication daily I brought  my triglycerides down to 889 April 2007.

TRIGLYCERIDES should be <150
TOTAL CHOLESTEROL should be <200

Here's my October 2007 blood tests:

TRIGLYCERIDES: 107 (dropped from 889 in April 2007!!!)
TOTAL CHOLESTEROL: 173 (was 286 April of 2007)
BLOOD SUGAR: Normal

I have my annual physical in a couple of weeks and will have blood tests.  I anticipate great results again!

As of today, I've lost 83 pounds and feel terrific! I have tons of energy.  My complexion is great.  I feel healthier than I have ever felt and I am an overall happier person.   I can cross my legs, run and jump with my kids!  Wear cool clothes if I want to.  My bunions and feet don't hurt any more, my knees feel great!  The list goes on and on.  I did let myself go over the last few years, but I've changed so much in appearance that many people I know haven't recognized me when we meet!!!

I look better, feel better and am a much happier person. I don't mind having my picture taken as much any more.  I'm not the overweight mom off in the corner impatient for the party to be over so I can get home.  My only regrets are that I did not take any measurements of my body (cuz I did not think this would work) and to date have lost a couple of bra sizes (luckily I had some to spare! haha)

I really love this diet and will continue for a short time longer until I lose 100 pounds from my heaviest weight ever (228).  Never thought it was possible!

Spicy Chicken Soup and Chop Suey Soup

Instant Soup with Leftover Makeovers!

Don't have time to cook from scratch?   Sure, there's old school recipes that take a whole afternoon, but with kids & work, who has the time?  Instead whip up an instant bowl of Kimkins low carb soup!  Keep broth on hand in your pantry and soup is never more than 3 minutes away.

Both recipes are perfect for using leftover veggies, chicken and seafood.  Put your own spin on these two hearty creations:

Spicy Chicken Soup  (makes 2 servings)
  • 1 16-oz can chicken or vegetable broth
  • 1 cup leftover chicken (canned OK)
  • 1 cup leftover cooked veggies (frozen OK)
  • 1/4 cup salsa or green chili sauce
  • 1/4 tsp each ground cumin & chili powder & garlic powder
Chop Suey Soup  (makes 2 servings)
  • 1 16-oz can chicken or vegetable broth)
  • 1 8-oz can chop suey vegetables, drained or
  • 1/2 cup leftover cooked veggies (frozen OK)
  • 1/2 cup leftover shrimp, crab or chicken (canned OK)
  • 1/4 tsp each white pepper & ground ginger & garlic powder
Heat all ingredients in a saucepan until warmed through, serve hot!  That's it!  Both recipes are a great way to use up thin sliced leafy salad greens, too.
