Stress Free Diabetes Management

Posted by in Untagged

Stress Free Diabetes Management
by
Pamela F Kelly
(abridged)

Cut some of the stress of living with diabetes — take control of your diabetes stuff!

The daily diabetes items on your to-do list can make you feel overwhelmed and frustrated, whether you're newly diagnosed or a longtime self-care expert. From monitoring blood glucose to making medical appointments, reading food labels, and fitting in exercise (feeling stressed out yet?), diabetes takes its toll on your sense of well-being ...

Supplies and Tools

Designate one spot in your home for storing your test strips, medication, logs, and extra supplies.

Contact List

Create a contact list of professionals to call when you have health concerns, and friends and family in case you have an emergency or aren't feeling good. Also include contact info for your pharmacy and medical supplies provider.

Travel Kit

Create a travel kit and carry it with you whenever you're away from home. Include blood glucose monitoring strips, batteries, snacks, water, hard candies, medicine, and information on what to do and whom to call in case of an emergency. Be sure to check and refresh the kit before each journey.

Kitchen Goods

Clear your kitchen of expired and less healthful foods.  Gather your favorite recipes —  with nutrition counts — in a binder or recipe file.

Medical Information

File your insurance and medical records and receipts in color coded folders in a file cabinet. When you want to review medical records for reimbursement, the documents will be handy.

Daily Schedule

Keep one calendar in a handy spot to check that you're not over committing yourself. Note self-care activities on the calendar (30-mintue walk, for example) to increase the chances you'll take care of them.

Kimkins Recipe: Spinach Beef Roulade

Posted by in Untagged

Beef, it's what's for dinner! The trick to choose the leanest cuts and trim all visible fat. These roulade bundles make a wonderful presentation for special company dinners. Make a double batch & freeze!

Ingredients (serves 8)
  • 2 lbs round steak, cut into 8 equal pieces
  • 9 oz pkg raw baby spinach
  • 8 oz sliced low fat Swiss cheese
  • 2 tsp each garlic powder, fennel seed, ground white pepper & salt
  • 8 oz white wine (or substitute beef broth)
Pound out each piece of steak to 1/4" thick (butterfly first if needed). Sprinkle each piece evenly with spices, then 1 oz (about 1 cup) of baby spinach leaves and then cheese. Roll up and secure each bundle with toothpicks or twine.

Roulades may be baked or pan braised. To bake preheat oven to 350, arrange beef bundles and pour white wine into the baking dish. Cover and bake for 30 minutes. Pan braise by arranging beef bundles in nonstick skillet with white wine or broth. Cook for 20 minutes or until center registers 160 degrees. For both methods let meat rest for 5 minutes, then slice thin & serve!

  • Total Loss: 94+ so far!

  • Lynne's Doctor Calls Her "A Miracle"!

Hi, my name is Lynne, I am 51 years old and about a year ago I was in a really bad place. After a total of 12 surgeries on my knees ending with both being replaced, the doctors told me that within 3 months I would be permanently confined to a wheelchair. There was nothing medically that could be done for me. I was so depressed. My husband of 26 years and I started handicapping our home, and trying to figure out how we would care for me when I could no longer care for myself.

On June 6, 2007 (my rebirth day) I was shopping for groceries and spotted the Woman's World magazine about Kimkins. I had some previous experience with low carb dieting, but not a lot of success. I came on the [Kimkins] web site and felt like I had come home. After signing up and starting this new Way of Life, I could not believe that it was really happening for me. I was just sort of lurking, and reading posts, but not really participating. I would post little bits, but then I got my very first PM and and invitation to join a challenge [First 20/20].

When I saw the results these women had I was amazed, but they wanted me to post all the time. My lurking days were numbered. By getting to know these particular women my whole world has changed. Having a support group of true friends has changed my life. I truly believe that with their help Kimkins has saved my life.

Now after losing almost 100 pounds and I still will lose more. I walk between 3 and 4 miles everyday just because I can. It is actually fun! I have learned to belly dance and I work out regularly with weights. My energy levels are unbelievable.

I go every 6 months to see my doctor and my blood work is all within the normal ranges for the first time in my life. At his office they call me the "incredible shrinking woman".
The doc who gave me the wheelchair sentence calls me "a miracle" and is continually surprised by my progress. At my last visit he shared with me that when before I started Kimkins he was thinking I would not even be alive in 3 years. But now he told me there is nothing holding me back from doing whatever I want to do. He tells me that I know best and I should just go and do. My life is waiting.

When I started Kimkins a year ago, I wore a size 26/28, I currently wear a 10/12. My BMI has dropped from 50 when I started to 34 now. I have lost 12 inches from my waist and 14 inches from my hips since I started. These are just some of the physical changes I have experienced, but the most exciting for me is that I actually get to participate in life -- not just watch from the sidelines.

As if that isn’t enough I find I like myself now. I never realized that I didn’t before, but I sure do now.
