One reason doctors want diabetics to exercise is to burn sugar (carbs) in their blood.

As your muscles contract and relax during exercise, they use sugar for energy.

To meet this energy need, your body taps into sugar supplies in your blood during and for a period after exercise, reducing your blood sugar level.

Perfect Roast Chicken

 This is a delicious, fast, low calorie alternative to traditional roast chicken and a coup (not coop!) for Kimkins diet members!

Ingredients

1 3-5 lb whole chicken
1 onion, quartered
2 cloves garlic, smashed a bit
1 lemon, quartered (optional)
1 bunch fresh herbs (rosemary & thyme are my favorites)
salt & pepper

Preheat oven to 450 degrees.

Remove giblets from chicken and set aside for another use. Rinse chicken well and pat dry with paper towels.

Place chicken in roasting rack or 9x13 baking pan. Place onion, garlic, lemon & herbs well inside chicken, sprinkle pepper & salt over the top.

Bake for 60-75 minutes or until skin is golden brown and leg moves easily. Remove and let rest for 15 minutes before carving. Kimkins Diet members, please remove skin before eating.

Makes excellent leftovers for salads, snacking & roll ups plus the carcass yields delicious homemade chicken broth. Nothing smells better than roast chicken wafting through the house!

Food Quantities: Measure or Weigh?

I'm trying to get a handle on how much I'm eating so I'm using a food journal. Is 4 oz the same as .5 cup?

Excellent question! No, it's not.

If you look at a bag of lettuce mix at the market, you'll note the weight is around 12 oz -- yet contains 10-12 cups! Clearly 12 oz for a huge bag is way more than 1.5 measuring cups.

Golden Rule: When you're tracking food, measure meat/chicken/fish/pork by weight (scale) and everything else by volume (measuring cup).
