Quick Snack Anytime -- Lettuce Wraps!

 There's nothing more ideal for ready made snacks to keep on hand in the fridge (home or work).

Have kids in sport teams? Pack up a few in the cooler to munch on the field.

These are my favorite combos. Varieties are endless depending on your personal preferences and what you've got on hand from meal leftovers.

Ham & Cheese

Oscar Meyer slice ham, squirt of Dijon mustard, sprinkle of shredded cheddar

Tuna Salad
Water packed albacore, chopped celery & dill pickle, drizzle of mayo

Fajitas
Leftover fajita chicken, thin sliced bell pepper & onion strips, drizzle of salsa

Philly Cheesesteak
Buddig type roast beef, 1 tbsp cooked mushrooms, 1/3 string cheese stick, wrap, microwave 20 seconds

A nice tip is to whirl up a cup of Pace picante salsa in the blender to smooth it out. Pour into a squeeze bottle and you can control the amount you use (good idea for any sauce). To one batch I added a tablespoon of mayo to make it creamy.

I keep a stack of wraps in a large Gladware bowl so I've always got a Kimkins snack ready.

Ask Kimmer: Carbs, Protein, Energy -- What To Eat?

I want to gain muscle mass and lose some fat but I am confused about all the terminology and how it relates to losing fat and gaining muscle.

For example I am told that carbs will give you energy to help you exercise and lose fat but at the same time, when exercising you will burn off the carbs first and the fat will remain untouched, so should I eat carbs or not?

Food contains calories but is that necessarily a bad thing?

I'm told that to build muscle you should eat a lot of protein, but people on diets have protein days to lose weight. Yet I am told if the protein isn't converted to energy or muscle it stores as fat. It just contradicts itself.

Also natural sugars which are found in fruit and vegetables good or bad? On one hand I need them but won't sugar clog up my system?

The only thing that makes sense to me is to drink heaps of water because muscles are about 70% water and only about 20% of water is stored as fat.

ANSWER

Isn't it confusing? I help people lose weight for a living and even I'm boggled by the information (good and bad) floating around out there.

Carbs don't give you "energy" per se. All foods contain calories and the scientific term for calories is "energy". Slim Fast had to stop their commercials that claimed their shakes provided "energy" because people assumed artificial energy.

There's no need to eat extra protein because it doesn't automatically turn into muscle. First you have to work out hard with weights, rip the existing muscle and then NEED more protein than you're already eating. That's unlikely because most Americans easily eat 200% or more of the 60 grams a day that the RDA suggests for a "typical" person who works out 2-3 times a week.

Eating extra protein that you don't need merely feeds extra calories and that can contribute to extra body fat.

Water is 0 calorie and none is stored as fat. No need to over drink water, it doesn't "cause" weight loss, although sometimes thirst is mistaken for hunger.

If you're on a low calorie high carb diet (think Weight Watchers), then fruit is fine as a snack. It is very high carbs so don't overdo it.

If you're on a low carb diet (think Atkins or South Beach), fruit is allowed at certain stages so pay attention to their rules.

If you're on a low calorie low carb diet (think Kimkins), save that fruit for when you're close to goal -- you won't get fast weight loss if you're eating it.

People on low carb diets like Kimkins don't eat extra protein, they limit their carb intake to get fast weight loss. Â

Cellulite, Cellulite, Please Go Away!

 Few beauty topics captures the attention of women more than "cellulite". It's the bane of our existence and can ruin the best long angle lens "back shot" in shorts or swim suit.

Even tabloids cash in by displaying revealing photos of celebrities with close-up shots of the horrific dimpling on the backs of expensive thighs on the most exclusive beaches in the world.

And we'll spend big dollars to get rid of the blasted cellulite! Never mind that there isn't a true cure, we don't care! Creams, massages, herbal supplements -- surgery. We'll try it.

To be clear, we're talking about the brownish stringy areas in the image above. The fiberous tissue that looks like a tree-gone-bad in a Sleepy Hollow novel.

So, let's take a look at the tried & true, plus a few newbies on the horizon. Cellulite treatment is as varied as it can get. Water, suction, laser, massage and now there is the electric muscle stimulation.

Electric currents passing through pads placed on the body cause the muscles to contract and relax alternatively. A good work out no doubt to build the muscles, but to what extent it is good for cellulite is really hard to say.

Lymphatic drainage massage increases the functioning of the lymphatic system, and helps to remove and filter waste, toxins and excess fluids from the body.

Body brushing removes dead cells from the surface of the skin, making it easy for toxins to be removed.

Tri-Active laser dermology is a high tech new fangled massager. It uses laser technology and has 3 different functions. Like any other machine, it first breaks up fat molecules and collagen, and then smaller lasers generate new collagen making surface skin smooth.

The new Vibratory Endermatic System for cellulite treatment increases blood circulation, stretches the connective fibers and reduces dimpling of skin.

Gene therapy works on the principle of an inherited cellulite gene on the "x" chromosome. Replacement of the cellulite causing gene engineered to follow a different pattern could prove to be the ultimate breakthrough. Of course, this would have to be done at a very early age and most children don't think of cellulite problems on the playground.

The general consensus from all credible medical sources is that there is no cure for cellulite. Look again at the diagram. Massage or lipsuction isn't going to remove the dense muscular fibers that bind to cause the dimpling effect.

Losing weight means having less fat to dimple, of course. Naturally I'd recommend Kimkins.

Navigating the Evils of Restaurant Eating

 OK, at some point we're all faced with the temptations of restaurant lures while on a diet. Kimkins members face the same choices.

How to survive? Fend for ourselves with oh-so-friendly waiters and delectable aromas wafting from the kitchen?

While I'll admit I'm a sucker for ambiance and a feeling of entitlement when I go out ("I've worked hard this week I deserve this!") even I manage.

And believe me, if I can do it, anyone can.

Italian


I've yet to find an Italian place that didn't offer chicken piccata. Add a fresh Caprese salad with grilled veggies and you're all set. Must admit I'm always up for a side of caponata. And, yes, I take home a large doggie bag.

Mexican

I live in southern California and Mexican restaurants abound at every corner, from large El Torito chain stores to small mom & pop authentic eateries. Delicioso and my favorite restaurants!

You can't go wrong with fajitas & a mixed salad, skip the rice, chips & beans. They'll make those fajitas with chicken if you ask nicely. Other favorites available everywhere are steak picado or carne asada.

(Put that margarita down!)

Steakhouse

Come on, no brainer! Steak, salad, steamed veggies!

Asian (Japanese, Thai, Chinese)

Teppanyaki places (above) are great for Kimkins and many will substitute extra grilled veggies for rice. The dramatic chef show alone takes your mind off food!

Chinese restaurants can rustle up any chicken or shrimp dish w/o sauce, just ask (skip rice & soup, most likely cornstarch). Hmmm, maybe sushi (only if no carb items).

Thai can be surprisingly Kimkins friendly if only for the fact that there are few chain Thai restaurants with inflexible menus and they're very willing to go that extra to keep customers happy.

Family (Denny's, Applebee's, IHOP)

Yikes, do your best! Nearly every delicious item in their intentionally strategic pictorial menu is loaded with breading, sauces & huge portions of carb laden side dishes. Be brave, search out a grilled "something" and a salad.


If the place you're going has a menu online, scope it out! Decide hours before what you're going to eat. Then you're in control and that lessens the chance of impulse ordering. Know your drink, too.

Did I mention I have a 15 second pep talk with myself in the parking lot before I go in? "It's a restaurant meal, not a once in a lifetime event." Yeah, weird. Hey, I've been a size 4-6 for five years now -- don't look a Kimkins gift horse in the mouth!

It goes without saying to divide your meal automatically in half ... for the doggie bag. Think of the delicious lunch you'll have the next day!
