Why Are the Last 20 Lbs Slower to Come Off?

Posted by admin in Untagged

The reason weight loss slows down as we get closer to goal is because our new lower body weight needs fewer calories.

Example
  • 250 lb person might need 2500-2800 calories a day to stay at 250
  • 150 lb person might need 1500-1800 calories a day to stay at 150

People Weighing on Bath Scales

  • When the 250 lb person drops to 1500 calories a day, that's a 1000 calorie deficit and loss is faster
  • When the 150 lb person drops to 1200 calories a day, that's a 300 calorie deficit and loss is slower
We need a 3500 calorie deficit to lose 1 pound.  Therefore, the 150 lb person will lose 1 pound about every 10 days. This rate will slow down as they continue losing and have a new lighter body that uses fewer basal calories.

If we rely on the thermogenic effect of  low carb (not medium carbs) from a weight loss plan like Kimkins, loss will speed up.  But cheats of any kind will set us back to square one and nullify the thermogenics.   Not to mention high calorie low carb snacks will slow us down even more.

Want to Make Cheese?

Posted by admin in Untagged

Try this quick recipe from Michael Chiarello, chef, restaurantaur and owner of Napastyle. You'll create the freshest, creamiest and most delicious soft cheese available anywhere!

Ingredients  (makes 4 cups)

1 gallon milk
1 cup cream
1/2 cup lemon juice or cider vinegar
1 tbsp salt
cheesecloth

Bring milk, cream and salt to a slow boil. Add lemon juice and let sit for 15 minutes. Stir cheese mixture (see the curds!) Over large heavy bowl, arrange several layers of cheesecloth to create a "strainer". This step is easier if you also use a large mesh strainer.

Carefully pour milk mixture over cheesecloth into the heavy bowl. Gather cheesecloth and lift up the cheese, then discard the liquid mixture. Let cheese drain again for about 5 minutes. Lift cheesecloth and squeeze to remove any remaining moisture.

You've made cheese! Check out Home Cheese Making for more techniques and recipes.

Introducing Halloumi Cheese & Unique Romanesco

Posted by admin in Untagged

Ready for a couple new Kimkins friendly food finds? Introducing Greek made Halloumi cheese and the Escher-like broccoli cousin, Romanesco!

Halloumi is processed usually with goat milk, but it's also done with sheep or cow's milk. Primarily produced in Greece, the Greek government is allowing small amounts to be created in Canada. What makes Halloumi special (besides the vague mint flavor?) It's grillable without melting! Make a "reverse" sandwich and cook in a pannini or George Foreman grill.

Have you seen any Romanesco in your grocer's produce department? Look around the vicinity of its cousins, broccoli and cauliflower. The mathematical perfection of the conical shape aside, it's quite the show stopper (not to mention full of cruciferous cancer fighting antioxidants).
