500 Lb Woman Shares Her Weight Loss Journey

The Style Network has launched a new reality show, Ruby.

The focus is a woman, Ruby, from Savannah, GA who estimates her weight at 500 pounds. The Ruby Show will follow her journey to lose weight. We'll be following her progress at Kimkins and cheering her on.

The first episode premiered this week. There's some heart tugging moments like when she says her underwear costing $30 per pair because of the extra fabric needed. Or the bricks placed under her bed so it doesn't collapse. She visits friends and can't fit into the chairs at the kitchen table so she eats alone on the couch. One of her personal goals is to eventually fit in her bathtub.

During the episode her thin friend visits from out of town and takes her on a less-junk food grocery shopping trip. Ruby also met with a doctor who told her she would die if she didn't lose weight. She began a diet and told her friends she could already feel the negative personality change coming on (probably food remorse).

Gingered Green Bean Salad

A unique salad for the Thanksgiving table or anytime. Refreshing, colorful and aromatic with the zing of fresh ginger. Top with drained tuna or diced chicken for a complete light lunch!  Whole frozen green beans also work well.

Ingredients (serves 4)
  • 2 cup green beans, cut in 2" lengths
  • 1 cup tomatoes, diced
  • 1 garlic clove, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp red wine vinegar
  • 1 tbsp mustard
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 8 cups mixed baby salad greens
Blanche green beans by immersing in boiling water for 2 minutes, then drain and run with cold water. Drain again and set aside.

Whisk together vinegar, mustard, garlic, ginger, salt and pepper. Taste, adjust seasonings. Arrange green beans over salad greens, top with fresh tomatoes and drizzle with dressing.

Toss gently and serve! Top with tuna or diced chicken for a complete light lunch.
