Want to Make Cheese?

Try this quick recipe from Michael Chiarello, chef, restaurantaur and owner of Napastyle. You'll create the freshest, creamiest and most delicious soft cheese available anywhere!

 

Ingredients  (makes 4 cups)

1 gallon milk
1 cup cream
1/2 cup lemon juice or cider vinegar
1 tbsp salt
cheesecloth

 

Bring milk, cream and salt to a slow boil. Add lemon juice and let sit for 15 minutes. Stir cheese mixture (see the curds!) Over large heavy bowl, arrange several layers of cheesecloth to create a "strainer". This step is easier if you also use a large mesh strainer.

Carefully pour milk mixture over cheesecloth into the heavy bowl. Gather cheesecloth and lift up the cheese, then discard the liquid mixture. Let cheese drain again for about 5 minutes. Lift cheesecloth and squeeze to remove any remaining moisture.
