2 bags 0 calorie Skinny Dip Noodles Angel Hair
4 thin sliced bacon, diced
6 asparagus spears, cut in 2″ pieces
1/3 cup grated Parmesan cheese
6 tablespoons light cream
4 tablespoons I Can’t Believe It’s Not Butter Light
1 egg, lightly beaten
2 garlic cloves, minced
1/4 teaspoon pepper & salt, to taste
In a large bowl whisk together the egg, Parmesan, parsley, pepper and salt. Steam the asparagus in 1″ of boiling water for 3-4 minutes or until barely tender. Drain.
Rinse the noodles under running water for 2-3 minutes. Let drain in a colander and dab with paper towels to dry so the sauce sticks better.
Cook the bacon in a large nonstick skillet until crispy. Add cream, butter, Parmesan & garlic and cook on low 3 minutes. Add pasta and asparagus to the Parmesan sauce mixture. Toss well to coat evenly and heat 2-3 minutes until hot.
Divide among warmed dishes. Sprinkle liberally with pepper and Parmesan cheese. Serve immediately & enjoy!
