Fast Mexican Crockpot Chicken

Slow Cooker Mexican ChickenA family favorite slow cooker dish and super versatile!  Serve it as is, shredded in lettuce wraps, diced for soups or cubed in a spicy omelet.  Make a double batch because it’s gonna disappear as soon as it hits the dinner table!  Freeze extras in portioned containers or Ziploc baggies.

4 6-oz boneless chicken breasts, no skin
1 cup jarred salsa
1/2 cup chopped cilantro (optional)
1/4 cup diced onion
1/3 cup light sour cream
1 packet taco seasoning
.
Stir together salsa, onion, sour cream, cilantro & spices to your slow cooker.  Add chicken and coat with salsa mixture.  Cover and cook on LOW for 6-7 hours or MEDIUM for 4 hours.  Add salt & pepper to taste and that’s it!

Tip: Serve over Skinny Dip Noodles Fettuccini with a mixed greens salad and drizzle with salsa mixture instead of salad dressing.  Less calories, less fat & super tasty!
