Makes 2 1/2 Cups (20 servings @ 2 tablespoons each)
1/2 cup + 1 tablespoon nonfat dry milk powder
1/2 cup ice cold water
2 tablespoons powdered sugar
1 tablespoon ice cold water
1 teaspoon vanilla extract
1 teaspoon unflavored gelatin
Chill a small mixing bowl and electric mixer beaters in the refrigerator.
Soften the gelatin in 1 tablespoon cold water in a glass measuring cup. Heat in the microwave for 10 seconds on HIGH and stir to dissolve completely.
Mix together the powdered milk, ice cold water and powdered sugar in the chilled mixing bowl. Beat the mixture with the chilled beaters on MEDIUM speed until foamy. With the motor running add the gelatin in a thin stream. Beat for 10 minutes and then beat in the vanilla.
Use immediately or freeze. If frozen thaw for 15 minutes before serving. This whipped cream deflates if left standing, but you can rewhip it with cold beaters.
