10 oz bag frozen cauliflower florets
1 1/2 cups shredded low fat mozzarella cheese
1/2 cup sour cream
1/4 cup I Can’t Believe It’s Not Butter Light
2 tablespoons grated Parmesan cheese
1/2 medium onion, diced fine
2 cloves garlic, minced fine
1 green onion, sliced thinly
salt and pepper to taste
crisp bacon bits (optional)

Cook bacon in a nonstick skillet until very crisp. Drain on paper towels, then crumble.

Add onion and garlic to skillet with remaining bacon drippings (if not using bacon, add 2 teaspoons oil). Saute until lightly browned; about 5 minutes.

Cook cauliflower in large saucepan with 2″ lightly salted water. Bring to a boil, reduce to simmer, cover and steam until soft; about 5-7 minutes. Drain and mash with a potato masher until light & fluffy. Heat briefly to evaporate extra water if needed.

Add sour cream, margarine, Parmesan, salt and pepper. Mash together, then add mozzarella cheese, bacon and green onion (reserve 1 teaspoon each green onion & bacon for garnish). Spoon into serving bowl, garnish and serve.
