Makes 50
25 fresh jalapenos
16 oz Jimmy Dean Original ground sausage
8 oz cream cheese
8 oz shredded parmesan cheese

Very spicy! But easy and makes 50 little "poppers". I don't know how to choose peppers, but I do know that it seems like the little ones are hotter than the larger ones. This is definitely higher in fat than allowed, so make sparingly.
Preheat oven to 350 F. Treat a cookie sheet with cooking spray or use a
Silpat liner.
Slice each pepper lengthwise and remove veins & seeds. Brown sausage on low heat until it is crumbly and fine. Let it cool for a bit, then mix in the cream cheese & the parmesan cheese.
Fill each pepper shell with about a tablespoon of sausage & cheese mixture. Bake on a cookie sheet for approx 30 minutes at 350 degrees. ('til tops are browned). Let cool slightly and serve.
Tip: Use latex gloves if you are sensitive. Remember to wash your hands afterward to remove the oil or you'll feel it burning. These are also great cold.
