Hot & Spicy Spam Omelet

1 egg + 2 egg whites, lightly beaten
1 oz shredded low fat Cheddar cheese
2 oz SPAM Hot & Spicy, diced fine
2 tablespoons chopped red bell pepper
1 tablespoon chopped onion

In a small nonstick skillet cook Spam, bell pepper and onion until veggies are softened; about 3-4 minutes.  Drain excess fat and remove Spam & veggies and keep warm.

Pour eggs into skillet over LOW heat.  Cook and gently push egg mixture toward the center and lift edges so uncooked egg reaches heat.  Cook until egg is set, about 3 minutes.

Sprinkle Spam and veggies over one half of omelet and top with half of cheese.  Lift up opposite edge of omelet and fold over.  Sprinkle with remaining cheese and cover for 1 minute to melt.

Slide omelet onto a warm plate and serve.
