1 cup riced cauliflower
1 egg, lightly beaten
1 tablespoon grated Parmesan
3/4 cup shredded part skim mozzarella cheese
2 tablespoons pizza sauce
pizza toppings of your choice (mushrooms, peppers, turkey pepperoni)
Preheat oven to 450 F. Treat a baking sheet with cooking spray. Steam the cauliflower until fork tender and drain. Press steamed cauliflower florets through a ricer.
Mix riced cauliflower, egg, and Parmesan cheese. Form firm pizza crust on the baking sheet. Bake for 15 minutes. Take out of oven, add sauce, toppings and cheese. Pop back in the oven 5 minutes until cheese melts. Let sit 2 minutes before eating.
