Kimkins Hot Breakfast Sandwich

Serves 1

1 Kimkins Low Carb Roll, split
1 egg, any style
1 oz slice lean sandwich ham
1 oz low fat American or Swiss cheese
2 teaspoons diet margarine
salt & pepper to taste

Slice the Kimkins Roll in half lengthwise.  Spread both sides very thinly with 1 teaspoon diet margarine.  Heat a small nonstick skillet on medium high.  When the griddle is hot place rolls face down and grill until toasted and crunchy, about 50 seconds.  Remove to a plate and add ham to the bottom roll (fold if needed).

Melt 1 teaspoon margarine in the skillet.  Add the egg (use an egg ring for a perfect circle), sprinkle with salt & pepper and cook as desired. Place on top of the ham, top with sliced cheese and add the top half of the roll.

Pop your sandwich in the microwave for 10 seconds to melt the cheese and munch away!  Save time and use a nonstick griddle that fits over your stove burners so you can cook everything at once (and nifty to make a pile of pancakes for the kiddos!)
