Makes 12 Muffins

6 eggs
1 cup shredded sharp Cheddar cheese
3 slices sandwich ham, minced
1/4 cup cream
1/4 cup water
1/2 cup shredded zucchini
1/4 cup chopped red bell pepper
2 tablespoon chopped onion
1/4 teaspoon each seasoned salt & pepper

Preheat oven to 350 F. Coat a 12 cup muffin pan generously with cooking spray.

Beat eggs, cream, water, salt and pepper in medium bowl until blended. Stir in cheese, zucchini, ham, bell pepper and onion until well mixed. Spoon evenly into the muffin tin.

Bake until just set, about 20-22 minutes. Cool 5 minutes before removing and serving.

Tip: Bake muffin frittatas the night before and refrigerate. Quickly warm up in the microwave in the morning.
