Mama Rosa’s Cheesy Garlic Noodles

Cheesy Chicken Broccoli CasseroleServes 4

2 bags 0 calorie Skinny Dip Noodles Fettuccini
1 cup frozen broccoli florets, defrosted (optional)
1/4 cup chicken broth or water
2 tablespoons cream
2 tablespoons diet margarine
3 tablespoons dry grated Parmesan cheese
2 wedges Laughing Cow soft cheese
2 garlic clove, minced fine
salt & pepper to taste

Drain and rinse Skinny Dip Noodles very well under running water for 2 minutes or squish around in a large bowl of cold water.  Drain well in a colander and dab to remove excess water so sauce will stick better.  Pour noodles into a medium mixing bowl.

Melt diet margarine in a large saucepan over low heat.  Add garlic and saute about 1 minute.  Add chicken broth and cheeses.  Stir while cooking until melted and smooth.

Pour mixture over noodles and toss to coat.  Cover, add broccoli if using, and cook on low 5 minutes to heat through.  Garnish with minced green onion or parsley is desired and serve.
