10 oz frozen chopped spinach (thawed & squeezed dry)
1 cup no sugar added spaghetti sauce (read labels)
2 cups low fat shredded mozzarella
1 cup 2% cottage cheese
1/2 cup Eggbeaters or 4 egg whites, lightly beaten
1/2 teaspoon Italian seasoning (optional)
1/2 teaspoon salt
1/4 teaspoon pepper

Preheat oven to 400 F. Generously coat a 9×12 baking pan or 9″ pie pan with cooking spray. Squeeze spinach very dry (twist in a kitchen towel) or the calzone squares will be watery.

Mix spinach, Eggbeaters or egg whites, cottage cheese, 1/2 cup cheese, 1/2 cup sauce, Italian seasoning, salt and pepper. Blend until all ingredients are mixed to an even texture. Spoon mixture into the baking dish and spread evenly so there’s no gaps or holes. Top with the remaining cheese and drizzle with the remaining sauce.

Bake 20 minutes until cheese is golden and bubbly. Remove from oven and allow to cool for 10 minutes then cut into 8 servings. Wrap individual slices in aluminum foil and enjoy cold or at room temperature. Wonderful for lunch with a salad. These can also be made in silicone muffins tins (never stick)!
