Pan Fried Chow Mein

Ahhh, the delicious smoky taste of chow mein at your favorite Chinese restaurant! We've recreated the experience in your very own kitchen! Yes, it freezes like a dream so make a double or triple batch and stock up for lazy weekend meals.

2 pkg Miracle Noodle angel hair pasta
1/2 small red bell pepper, sliced very thin
1/2 small onion, sliced very thin
8 Chinese pea pods, sliced lengthwise
1 green onion, sliced very thin diagonally
1 stalk celery, sliced very thin diagonally
3 cloves garlic, finely minced
1 tablespoon grated fresh ginger root
1/2 cup chicken broth
1/4 cup peanut oil
3 tablespoons oyster sauce
2 tablespoon soy sauce
1 tablespoon dark sesame oil
1 teaspoon black bean sauce
1 tablespoon salt
1/2 teaspoon ground white pepper

To get the delicious smoky taste like Chinese restaurants you'll need to use a steel wok over very high heat. Use peanut oil it can handle high heat. Olive and vegetable oil break down and burn -- blech!

Fill a stockpot with water, add 2 tablespoons of salt, stir and bring to a boil. In a small bowl mix peanut oil, garlic and ginger to flavor the oil. Let sit.

Rinse Miracle Noodle pasta very well under running water for 2 minutes and drain in a colander. Add pasta to the boiling water. Stir well and let cook for 3 minutes. Drain again and dab pasta with paper towels to remove all excess water.

Slice all vegetables very thin diagonally. A mandolin makes this job very easy and it hangs handy on the kitchen wall.

In a medium mixing bowl add onions, bell pepper, green onion, pea pods and celery. Set aside. In a large mixing bowl mix chicken broth, oyster sauce, soy sauce, sesame oil, black bean sauce and white pepper. Add angel hair pasta and toss well to coat. Set aside.

Add oil to the steel wok. Heat on VERY HIGH until oil begins smoking.

Add angel hair pasta and stir fry very quickly to coat with oil. Keep stir frying over high heat until pasta begin to caramelize a bit. Add veggies, toss with pasta and stir fry quickly for 3-4 minutes. Veggies should be tender crisp and pasta beginning to brown in spots. Check for seasonings and serve hot!

Tip: You can also add leftover chicken, pork or shrimp. Add with veggies and toss to mix well.
