1 cup light coconut milk
1 tablespoon cream (optional)
1 teaspoon pineapple or vanilla extract
1-2 packets artificial sweetener
6-8 ice cubes

Mix all of the ingredients in an ice crushing blender. Mix on HIGH for 1-2 minutes or until ice is smooth and slushy. Lower carbs and fat by swapping 1/2 cup diet pineapple soda for 1/2 cup lite coconut milk.
