Roasted Tomatillo Salsa

Tomatillo Salsa SoupMakes 4 cups

8 tomatillos
1 onion
2 garlic cloves
3 serrano chiles
1/2 cup chicken broth
1/2 cup fresh cilantro
1 teaspoon salt
1/4 teaspoon pepper

Preheat broiler to 500 F.  Coat a baking sheet with cooking spray.

Coat tomatillos, onion, garlic and chiles with cooking spray on all sides.  Broil for 8-10 minutes or until they begin to get dark brown in spots.

Spoon broiled veggies, broth, cilantro and spices into a blender.  Process on HIGH for 45-60 seconds or until smooth.  Taste for seasoning and serve.

Tip: This salsa makes an excellent soup base mixed half and half with chicken broth.
