Skinny Turkey Tetrazzini

Skinny Dip Noodles Turkey Tetrazzini8 servings

3 cups diced cooked turkey
2 pkg Skinny Dip Noodles Fettuccini
10 oz bag frozen mixed veggies (no potatoes or corn)
1 egg, lightly beaten
2 cups shredded low fat Cheddar cheese
1 cup light cream
1/2 cup grated Parmesan cheese
2 teaspoons chicken broth powder
1/4 teaspoon each garlic powder & pepper

Preheat oven to 400 F. Coat a 9×13″ casserole dish with cooking spray. Rinse Skinny Dip Noodles under running water for 2 minutes then dry with paper towels.

In a large saucepan heat cream and egg on low. Add 1 1/2 cups Cheddar cheese, Parmesan cheese, chicken broth granules, garlic powder & pepper and stir until melted. Do not let boil.  Stir in frozen vegetables and turkey.  Remove from heat.

Spread Skinny Dip Noodles evenly on the bottom of the casserole dish. Sprinkle with garlic powder and pepper.  Pour veggie turkey mixture evenly over all. Cover casserole with aluminum foil.

Bake 40 minutes or until heated through. Remove foil the last 10 minutes and sprinkle with remaining 1/2 cup Cheddar cheese.  Bake 10 minutes more, remove from heat and let sit 5 minutes before serving.
