Spicy Fish Soup

Spicy Fish SoupServes 4

2 6-oz halibut steaks or other firm fish
2 Italian tomatoes, seeded & chopped fine
1 small onion, chopped
1 serrano chile, seeded & minced
1 cup water
2 teaspoons corn oil
2 teaspoons grated fresh ginger
1 teaspoon taco spice seasoning
1/4 teaspoon salt

Thaw fish if frozen. Rinse fish and pat dry with paper towels.  Remove skin and bones. Cut into 1″ pieces and set aside.

In a medium saucepan heat oil over medium heat. Add onion and cook about 5 minutes or until tender. Add ginger & serrano pepper and cook 1 minute more.   Add tomatoes and cook 3 minute. Stir in water, taco seasoning and salt.

Bring to a simmer and reduce heat. Stir in fish. Cover and cook about 5 minutes or just until fish pieces flake easily when tested with a fork.  Serve immediately and garnish with cilantro if desired.

Tip: Break off a small piece of fresh ginger to buy (grated ginger freezes well for later use).
