Taco Bell’ish Lettuce Wraps

Taco Bell Lettuce WrapMakes 6 wraps

1 lb 95% extra lean ground beef
6 lettuce leaves
1 Roma tomato, diced
1/2 small onion, chopped
1/2 small bell pepper, chopped
2 cloves garlic, minced
1/2 cup water
1 Taco Bell Seasoning Mix
diced tomatoes & guacamole (optional garnish)

In a large nonstick skillet add ground beef, onions, bell pepper and garlic. Cook on medium, stirring and breaking up the meat.

When meat is cooked through carefully drain off excess fat. Spoon meat & veggies into your Magic Bullet or a food processor and pulse a few seconds at a time until finely ground like Taco Bell meat.

Return to the skillet, add Taco Bell Seasoning Mix and water. Stir well and cook 5-7 minutes until water has evaporated.  Divide meat evenly into 6 lettuce leaves.  Top with chopped fresh tomato, guacamole or shredded cheese and wrap burrito-style, tucking in bottom and sides.
